Ethic and comunity

Globalization is a huge web of economical and social interconnections which we are all part of. In general most profits from the food we eat are in the hands of big importers or large distribution markets, while farmers get only a minimum share. This logic si particularly true for importation products such as coffee, tea, cacao, rice, etc, coming especially from the south of the world, where low prices are due to lack of regulations which safeguard workers and environment.

Fair trade is a commercial network which guarantees an equal price to producers, safeguarding both the workers and their environment.

We use various fair trade products to cook and at the bar: thai rice, quinoa, cous cous, spices, coco milk, chocolate, coffee, tea, etc.
We are friends of the Cooperative ExAequo which has two fair trade shops in Bologna, supplies us with some products and with whom we organize fund raising dinners at our restaurant to finance international cooperation projects, as well as caterings for events like weddings or conferences.

The criteria which define fair trade are:

1. price of products agreed with producers, considering real production costs and labour union salary, plus an extra to finance local development projects;
2. favour products that come from small cooperatives or communities;
3. stipulation of regular commercial contracts, excluding speculative intermediations and paying in advance 50% of the good’s value;
4. guaranteeing the respect of working conditions according to the International Labour Organization;
5.favouring organic farming or production and distribution methods environment friendly;
6. transparency as to each subject’s share on the final price;
7. promotion of comunication and political actions on themes like globalization, environment, peace, etc;
8. re-investing incomes on fair trade or social projects.
